We’re so used to equating cocoa with chocolate, and for good reason, cocoa is chocolate’s main ingredient. However, there are three types of chocolate, and they all are very different, especially in terms of their health benefits: dark chocolate, milk chocolate and white chocolate. White chocolate is the most unhealthy of the three because it has no cocoa powder in it, but instead is made from cocoa butter, milk and sugar. Milk chocolate is next on the scale and does contain some cocoa powder, but it is also made with some milk or cream and sugar. Dark chocolate is the healthiest of the three because it contains the highest amount of cocoa powder, no cocoa butter or milk and very little sugar. Consequently, it retains the bitterness of the cocoa, but the take-away here is that the healthy ingredient of chocolate is COCOA!

Here’s a great recipe for hot cocoa which eliminates the huge amount of sugar and saturated fat usually found in most recipes and especially in prepackaged mixes. We’ve replaced the two tablespoons of sugar PER CUP (!) with a single tablespoon of Yacon Syrup Gold. Yacon Syrup is made from the root of a plant that grows in Peru. It contains special sugars called fructooligosaccharides (FOS) which taste sweet but don’t get absorbed in our bodies. It’s also know for a myriad of health benefits.

Peruvian Hot Cocoa Recipe (Microwave Single Serving)

3 tsp pure Cocoa Powder
1 cup almond milk
1/4 tsp vanilla extract
1 Tbsp Peruvian Yacon Syrup Gold (more or less to taste)
Dash each: nutmeg, ground cloves, cinnamon and salt

1) Mix cocoa, nutmeg, cloves, cinnamon, salt and vanilla in mug. 2) Heat milk in microwave at high for 1-1/2 minutes. 3) Slowly add milk to cocoa mixture, stirring with spoon until smooth. 4) Stir in Yacon Syrup.
