A Healthy, Non-dairy Alternative That’s Low In Sugar
We’ve received a lot of letters from readers that just love our Peruvian Hot Cocoa recipe. We would like to say Thank You to everyone for your kind words. With all of the health benefits of cocoa, it’s something that everyone should incorporate into their diet.
But we’ve also received a number of questions about the almond milk in our recipe, from people who are concerned about processed, store-bought products. Our reader Michelle, from Oxnard, California writes:
“Thank you for the wonderful hot cocoa recipe, and for introducing me to yacon syrup. I just love this recipe because it tastes great and there’s no harmful, excess sugar to worry about. I’ve integrated your Yacon Syrup Gold into many of my other recipes as well. However, I am having trouble finding almond milk that I can trust. They all have sugars and gums and possible allergens in them. Do you have any suggestions for a good, healthy almond milk? Thanks again. Michelle”
Well Michele, we can do one better! The BEST almond milk is one which you can make right at home with a very simple and fun process. And if you have kids, they will love to help, and they’ll also learn about healthy foods in the process. This recipe for making homemade almond milk also contains no harmful excess sugars because it uses yacon syrup instead of sugar, honey or maple syrup that most almond milk recipes use.
Homemade Almond Milk Recipe
1 cup organic raw almonds
2-4 cups filtered water
2 tsp vanilla extract
2-3 Tbsp Peruvian Yacon Syrup Gold (more or less to taste)
Dash salt
1) Cover the almonds with 1 inch of filtered water and soak at least 4 hours and up to 2 days (the longer they’re soaked the creamier the almond milk).
2) Drain the almonds discarding the liquid and rinse thoroughly with filtered water.
3) Add rinsed almonds, salt and water to blender, pulse and then blend at high until nuts are smooth and liquid is white (approximately 2 minutes), adding up to 2 more cups until desired consistency is reached.
4) Pour through a fine strainer or nut milk bag and press out all the almond milk.
5) Return liquid to clean blender and blend in Yacon Syrup.
6) Refrigerate in sealed container. Will keep for up to two days.
You can use this wonderful, all-natural almond milk in your coffee, hot cocoa, on your cereal or as a refreshing and nutritious drink. Almonds have a number of health benefits ranging from heart attack risk to supporting brain health and are the lowest calorie nuts, having only 160 calories per ounce. But be sure to use raw almonds because the higher temperatures used to roast almonds can destroy their precious nutrients.

What should you do with the leftover almond meal? Easy, save it in the refrigerator and add it to your smoothies or oatmeal, or even in baked goods. You can also dehydrate it (or bake at low temperature until dry) and keep it in your freezer. It will last for months this way and you can remove whatever you need from the freezer.
