What Is Yacón Syrup?
Raw Yacon Syrup is a sweet syrup refined from the root of the Yacon plant (Smallanthus sonchifolius) which grows in the highlands of South America. Also referred to as the Peruvian Ground Apple, the root and leaves of the Yacon plant have been used for centuries in Peru for a variety of culinary and medicinal uses, from a basic sweetener to treating digestive disorders and even diabetes.

Is Yacon Syrup Safe?
Yacon Syrup has been widely used and is considered to be safe and virtually free of side effects when taken in small amounts. Also, studies conducted on laboratory rats which were given several orders of magnitude more than the recommended human dosage revealed no toxicity effects. Though heating Yacon Syrup to temperatures above 70˚C (158˚F) can reduce its beneficial properties, it will still maintain it’s sweetness characteristics while providing low calories and high fiber.
